Amanda's Dairy-free Nut-free Egg-free Chocolate Chip Cookies

INGREDIENTS:
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup dairy-free margarine
3/4 cup sugar
3/4 cup brown sugar
2 teaspoons vanilla extract
3 Tablespoons water, 2 teaspoons baking powder & 3 Tablespoons vegetable oil or canola oil,
all mixed together
2 cups Amanda's Own dairy-free nut-free gluten-free egg-free chocolate chips

DIRECTIONS:
Preheat oven to 375 degrees F.
Mix flour, baking soda and salt. Set aside.  Mix margarine, sugar, brown sugar and vanilla until
creamy.  Mix water, baking powder and oil mixture into other wet ingredients.  Add dry ingredient
and mix well.   Add chocolate chips and mix until well incorporated.
Cover cookie dough with plastic wrap and refrigerate for 2-4 hours before baking to firm up the
dough.
Drop by tablespoons onto a GREASED baking sheet or parchment lined baking sheet. Bake for
9 to 11 minutes or until golden brown. Cool on baking sheet for 1 minute then remove to wire
rack to cool completely.
Store in air tight container at room temperature or in the refrigerator.
Yields about 4 dozen.


Amanda's Dairy-free Nut-free Egg-free Chocolate Chip Banana Muffins

INGREDIENTS:
3/4 cup sugar
1/2 cup dairy-free margarine
3 Tablespoons water, 2 teaspoons baking powder & 3 Tablespoons vegetable oil or
canola oil, all mixed together
1 1/2 teaspoons vanilla extract
2 teaspoons baking powder
1/4 teaspoon salt
3 very ripe bananas, mashed
1/2 to 3/4 cup dairy-free nut-free Amanda's Own chocolate chips
2 cups flour
1/4 cup water

DIRECTIONS:
Preheat oven to 375 degrees F.
Mix margarine and sugar until creamy in a medium bowl.  Add water, oil, baking powder
mixture to the sugar mixture and mix well.  Add in the vanilla extract, baking powder and salt.
Add the mashed banana, chocolate chips and water and mix well.  Slowly add the flour until all
of the ingredients are thoroughly mixed.  Line muffin tins with paper liners.  Scoop batter into
prepared muffin tins.  Fill approximately 1/2 to 3/4 full.  Bake 25 to 30 minutes or until toothpick
inserted into center comes out clean.  Remove muffins to wire racks to cool.   
Yields about 14-18 muffins.


Amanda's Dairy-free Nut-free Egg-free Chocolate Chip Cupcakes

INGREDIENTS:
1 cup sugar
1/2 cup unsweetened cocoa powder
1/2 cup dairy-free margarine
1 cup water
1 1/2 Tablespoons water, 1 teaspoon baking powder and
1 1/2 Tablespoons vegetable oil or canola oil, all mixed together
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract
2 cups flour
3/4 cup to 1 cup Amanda's Own chocolate chips

DIRECTIONS:
Preheat oven to 400 degrees F.
In a large bowl,  combine all the ingredients, except for the flour and chocolate chips.  Once
mixed well, stir in the chocolate chips.  Mix in the flour and combine well. Line muffin tins with
paper liners.  Fill muffin tins 2/3 full.  Bake for 18-20 minutes or until a toothpick inserted into
the center comes out clean.  Remove to a wire rack to cool. Frost and decorate once cooled.
Yields about 14-16 cupcakes.

Amanda's Dairy-free Nut-free Egg-free Chocolate Chip Brownies

INGREDIENTS:
2 cups flour
2 cups sugar
3/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon salt
1 cup water
1 cup vegetable oil or canola oil
1 teaspoon vanilla extract
1/2 cup to 3/4 cup Amanda's Own chocolate chips

DIRECTIONS:
Preheat oven to 350 degrees F.
In a large bowl, combine the flour, sugar, cocoa powder, baking powder and salt.  Pour in
water, oil and vanilla; mix well.  Stir in chocolate chips and mix until evenly combined.  Spread
evenly into a greased 13 x 9 inch baking pan.  Bake for 25 to 30 minutes.  (They may need
slightly more baking time if you like the brownies a little less gooey inside.)  
Yields about 16 brownies.
